Oh, tis the season… for 102 Gluten Free Cookie Recipes!

Well, you might be reading this post in July, and it will be just as awesome, I promise. But there is something about December that brings out the Cookie Monster in me.

I swear I can pass up cakes and pies and fudge and flan… but when it comes to little, crumbly bites of sugary bliss, I’m dead in the water. I’m goo in the sand. I’m pied to the piper.

It doesn’t matter that they are gluten free. I’m still puddy in the cookies’ hands.

And a quick note before you start pouring through these guys, If a recipie has a blend of what appears to be light flours, I’ll usually just add them all up for volume and use my trusty Bob’s Red Mill Gluten Free All Purpose Baking Flour.

I buy it in bulk from Amazon because the price is better. I’ve included my affiliate link below for easy purchasing right from this post!

No more delaying…

FAQs

How to make gluten-free cookies less dry and crumbly? ›

Use a Binder. Binders like xanthan gum and guar gum provide structure in gluten-free baking to make up for the missing gluten. This prevents cookies from being too crumbly plus it also helps with freshness.

How does gluten-free flour affect cookies? ›

Gluten-free flours often contain fine starches, so they absorb more liquid than conventional flour. To address this, gluten-free recipes usually call for more liquid and produce looser batters. They may also call for a larger quantity of leavening, like baking powder, to help add volume and lighten the texture.

Why are my gluten-free cookies so dry? ›

Another reason is that gluten-free flours, such as almond flour or coconut flour, can behave differently than wheat flour in baking. They may absorb more liquid, for example, which can result in dry or crumbly cookies.

How to make gluten-free taste better? ›

Flavor. New bakers should try adding extra vanilla and/or spices to recipes. Gluten-free flours often have unique tastes, and adding additional flavoring to recipes will help cover up these unfamiliar flavors.

What holds gluten-free cookies together? ›

Binding agents (such as xanthan gum, guar gum, or flax) help give gluten-free baked goods the elasticity needed to create structure — so if your favorite gluten-free flour mix doesn't contain one, you'll probably want to add one.

How do you thicken gluten-free cookies? ›

If your cookies are too thin and crispy, use soft butter, do not chill the dough, bake less time and consider raising the temperature of your oven by 25 degrees.

What is the best gluten-free flour to bake cookies with? ›

Almond flour is a grain-free, protein-rich flour that lends well to cookies, cakes, and more! Almond flour is made from blanched almonds, meaning without skins (as opposed to almond meal, which is made from raw almonds with skins). This is why it has a fluffy, light texture and pale golden color.

Should I add xanthan gum to gluten-free cookies? ›

Using xanthan gum helps provide some of the stickiness that gluten free goods lack, replacing some elasticity. Xanthan gum mimics some of gluten's most essential properties by sticking to flour and its moisture. This helps create moist goods that hold their shape after being baked.

Can I just replace regular flour with gluten-free flour? ›

If the original recipe calls for 260 grams of all-purpose flour, substitute with 260 grams of your blend. Beat the batter more. Because gluten-free flours provide less structure than all-purpose, the batter or dough you make with them may require more beating than that which you are accustomed.

What is the secret to moist gluten-free baking? ›

Add extra liquid: Gluten-free flours tend to absorb more liquid than regular flour, so you may need to add more liquid to your recipes to compensate. This can help to keep your baked goods moist and prevent them from becoming dry and crumbly.

Should you let gluten free cookie dough rest? ›

Rest the dough.

For gluten free chocolate chip cookies with the best flavor and best texture, let the dough rest for 24 – 48 hours before baking.

How do you make gluten free cookie dough less sticky? ›

Tips for Making Perfect Gluten Free Sugar Cookies

If your dough is sticky: You may have a sticky dough if you're baking at high altitude. Incorporate 2-3 Tablespoons more flour into the dough then refrigerate until firm and bake.

What to avoid for gluten free baking? ›

Some baking ingredients that contain gluten (and thus are not suitable for a gluten-free diet) include:
  • Wheat.
  • Semolina.
  • Spelt.
  • Durum.
  • Emmer.
  • Einkorn.
  • Rye, sometimes referred to as pumpernickel.
  • Barley.

Which gluten free flour is best for baking? ›

Best Overall: Bob's Red Mill Gluten Free 1-to-1 Baking Flour

This mix, which has all recognizable ingredients (including sweet white rice flour, which is the main ingredient in mochi, a nice light, powdery, starchy flour that doubles as a binder), worked well in all three of our tests.

What does baking soda do in gluten free baking? ›

Texture and Rise: Gluten-free baking often requires a bit of finesse to achieve the desired rise and texture. Baking soda's reaction with an acid can help achieve that necessary lift, while baking powder provides an extra boost when the batter or dough is exposed to heat.

How do you make gluten-free baked goods less crumbly? ›

Add xanthan gum to gluten-free flour. It enhances elastic qualities that gluten-free flours lack, making it easier to work with and less likely to crumble. Add plenty of water to the gluten-free flour to prevent the pastry from becoming too dry when rolling out.

How to fix crumbly gluten-free dough? ›

The gluten in traditional flour is what gives dough its stickiness. Without it, gluten-free products can be dry and crumbly. There is a way to compensate for this however — use xanthan gum. Some bakers also use gelatin or agar.

How do you make gluten-free baking not dry? ›

Add more fat or liquid: It might just be that you need a bit more moisture in your recipe, especially if you're converting a regular “gluten-ful” recipe to gluten-free. Try adding anywhere from ¼ to ½ cup of liquid or fat to the recipe and see if that helps.

How do you fix dry crumbly cookies? ›

Dry – “Dry” or “Crumbly” dough is a product of over-mixing or using too much of any ingredient during the mixing process. This can be reversed by adding one to two tablespoons of liquid (water, milk or softened butter) to your mix.
