Hi! My name is Jennifer and I love snacks.

Who’s with me?

Personally, I’m a grazer.

While, yes, I DO sit down and eat breakfast, lunch, and dinner,I tend to eat smaller meals and nibble on random snacks throughout the day.

My schedule tends to go like this:

  1. Coffee + little sweet snack with my coffee (I know I’m not alone there)
  2. Breakfast – maybe a few hard boiled eggs with some toast
  3. Snack
  4. Lunch – I’ve been really into veggie burgers lately
  5. Snack
  6. Dinner – blog leftovers 9 times outta 10
  7. After dinner snack #1
  8. After dinner snack #2 (we eat literally at 5 o’clock, so I need another snack or I won’t sleep 😉 )

As you can see.

Snacks are my jam.

On the go snacks – aka snacks that I can make ahead of time that I can then grab and go when I please – are even more my jam!

As you can probably guess, these honey walnut granola bar bites totally fit the bill.

  • Salt – for flavor
  • Coconut oil – the binder
  • Honey – for sweetness and stickiness to keep these together
  • Vanilla – for flavor
  • Dark chocolate and maldon sea salt – optional, but highly recommended for that ultra yummy sweet/salty combo

How do you make homemade honey walnut granola bar bites?

  1. Throw everything (minus optional chocolate and sea salt) into your food processor and process until the mixture forms into a ball
  2. Use a cookie scoop to evenly scoop into 20 even bites – the mixture will be very sticky
  3. Place onto a silicone mat lined baking sheet and place in the fridge, so the bites can firm up
  4. Remove from fridge and use your hands to roll into smooth bites
  5. Drizzle with optional chocolate and sprinkle of sea salt. I even topped some of them with an extra California Walnut for added crunch – YUM!
  6. Store in tupperware in the fridge
  7. Grab and GO!

This sound great except I am highly allergic to coconut. What is healthy that you could replace for the coconut oil? Thanks!! 😊

Any other neutral flavored oil should work 🙂 or maybe try butter? Coconut oil solidifies as it chills, as does butter, so not sure if using another oil would effect the texture!

What size cookie scoop did you use? I’m considering buying one. Thanks!

FAQs

How do you get homemade granola bars to stick together? ›

Honey – Along with the nut butter, it helps all these ingredients stick together! I love its warm amber flavor in this recipe. Vanilla extract – It amps up the bars' warm flavor.

How long do homemade granola bars last? ›

In general, most homemade granola bar recipes will last up to a week when stored in an airtight container.

Is it cheaper to make your own granola bars? ›

Homemade granola bars aren't hard to make once you have all the right ingredients and they'll certainly save you money in the long term.

What ingredient makes granola stick together? ›

Add an egg white.

The whites act as a kind of glue that binds the ingredients together. To ensure that the egg whites coat all the ingredients, I beat them with a whisk until foamy and increased in volume, which makes it much easier to fold into the granola.

Should you soak oats before making granola bars? ›

Fill the bowl up with water to completely cover the mixture – enough that you can stir to combine. This soaking process will help the oats and seeds digest better. After the oat/seed mixture has soaked 8-12 hours, add the rest of the ingredients and combine.

Why is my homemade granola not crunchy? ›

I aim to let it hit room temperature, whatever that may be; the real point is to give it ample time to shed excess heat and steam. This should take about 45 minutes; if left out indefinitely, the granola can turn sticky or soft, so do try to put it away as soon after cooling as you can.

Why is my granola bar not crunchy? ›

Baking time: Increase the baking time for your granola. The longer you bake it, the drier and crunchier it will become. Keep a close eye on it to avoid burning, and stir it occasionally during baking to ensure even toasting.

What is the best glue for granola bars? ›

Honey and brown sugar help make a glue for the bars.

The honey and brown sugar really helps with keeping the bars together. Chocolate chips added to the mixture help, too. We add some to the granola mixture while it is still warm.

Why are homemade granola bars better than store bought? ›

They can be more cost-effective: Homemade granola bars can be less expensive than store-bought options, especially if you buy ingredients in bulk or on sale. They can be fresher: Homemade granola bars can be fresher than store-bought ones, which may have been sitting on the shelf for a while.

How do you know when homemade granola is done? ›

Keep in mind that the granola won't be dry right out of the oven — it will dry as it cools. So take it out of the oven when it looks lightly toasted and smells like cooked honey.

Can you eat a 2 year old granola bar? ›

Most granola bars are actually quite shelf-stable and can last for months, or even years, if stored properly. Typically Granola Bars Are Good For 6-10 Months past the labeled best by date. The key to making sure your granola bars don't go bad is to keep them dry and free from moisture.

Are homemade granola bars worth it? ›

Are Granola Bars Healthy or Unhealthy? While store-bought granola bars can be unhealthy and full of added sugars, these homemade granola bars are healthy in moderation. They're a delicious and nutritious snack option compared to those that come in a package.

Is 2 granola bars a day too much? ›

Consuming one or two bars per day as a snack is generally acceptable, but should be balanced with other nutritional needs and the overall diet. Individuals should be cautious of their total daily intake of calories, sugar, fat, fiber, and sodium to maintain a balanced diet.

Do granola bars count as junk food? ›

Often touted for their whole grain goodness, most granola bars are sticky-sweet junk food in disguise. Don't let a few oats fool you — especially when you also see marshmallows and chocolate chips. Instead: If granola bars are a must-have, choose one with 6 grams of sugar or less per bar, and hopefully some fibre.

What do you wrap homemade granola bars in? ›

These bars will soften at room temperature so keep them in the fridge, or wrap in parchment paper or saran wrap and freeze individually. However you eat them them, I hope you love these homemade chewy granola bars!

Does homemade granola harden as it cools? ›

NOTE: The granola will clump and harden while cooling - not during baking. Allow to cool before stirring in the raisins, cranberries, or craisins. If stored in an airtight container, your granola could last for 2 weeks.

Why is my granola not hardening? ›

In order to attain perfectly crunchy granola, it's essential to stir your ingredients as they cook. Stirring allows the ingredients to brown up more evenly and reach a delicious level of crispiness.
