February 8 is National Girl Scout Cookie Day! Celebrate with this Thin Mint Milkshake recipe!

I feel like there's so much nostalgia linked with Girl Scout Cookies in this country. I think everyone I grew up with was a Girl Scout at one point or another. Whether or not you were or your kids are/were, you no doubt have a favorite Girl Scout cookie, right? For me, it's Samoas -- AKA one of the few food items containing coconut that I enjoy. For many of my friends, it's Thin Mints.
In honor of National Girl Scout Cookie Day and my beloved fellow scouts (once a Girl Scout, always a Girl Scout, right?), I have created a milkshake that would make former Girl Scouts like me and future Girl Scouts like my daughter swoon with heavy foodie sighs.

This milkshake recipe requires just three ingredients without the whipped cream, and leaves you with plenty of cookies leftover to munch on with the kiddos while you're waiting for the shakes to blend.

These thin mint milkshakes are a delicious way to enjoy some of the fave Girl Scout cookies!
Servings: 2 servings

Ingredients
- MILKSHAKE:
- 8 Girl Scouts Thin Mint cookies plus more for garnish and general nibbling
- 2½ cups vanilla ice cream
- 1 cup 1% milk
- WHIPPING CREAM:
- 1 cup heavy whipping cream
- ½ cup confectioner's sugar
Instructions
Crumble cookies into a blender. Add vanilla ice cream, then milk.
Blend all ingredients well until fully blended.
In a stand mixer with a whip attachment, mix whipping cream and sugar on high for several minutes until stiff peaks form.
Pour milkshake mixture into cups. Top with whipped cream, and garnish with a Thin Mint Cookie. Makes two milkshakes.
Notes
More ideas to add to this recipe: For more minty flavor - add a half teaspoon of peppermint extract before blending. Garnish ideas - sprinkle mini chocolate chips, mint chocolate chips, or chocolate shavings on top
