My sister made the most amazing biscuits for Beautiful Creatures party and my mom made this super tasty fried chicken for part of our Chinese New Years feast (she dosed it in sweet and sour sauce) and I have been craving those two dishes like a crazy girl (minus the chicken sauce) and finally I got them to indulge me.

It turns out the biscuits are super fast and easy to make so took a few pictures while she whipped up a batch.

What makes biscuits taste better? ›

Use good butter and dairy

Because biscuit recipes call for so few ingredients, it's important that every one is high quality—you'll really taste the difference. Catherine recommends splurging a bit on a grass-fed butter or European-style butter (now's the time to reach for Kerrygold!).

Should you chill biscuit dough before baking? ›

Make a batch of the basic biscuit dough, then chill until firm, roll out and cut out shapes as above. Bake on a non-stick baking tray for 10-12 minutes until pale golden. Carefully transfer to a wire rack to cool and crisp up.

Is butter or crisco better in biscuits? ›

The butter version rises the highest — look at those flaky layers! The shortening biscuit is slightly shorter and a bit drier, too. Butter contains a bit of water, which helps create steam and gives baked goods a boost.

Is it better to use milk or buttermilk in biscuits? ›

While the quantity of acid could be fine-tuned, the consistency of milk-based substitutions will be unavoidably thin. Compared to cultured buttermilk, plain milk is watery, making the dough so heavy and wet that it oozes into a puddle, turning the biscuits flat and dense.

What kind of flour makes the best biscuits? ›

Cake flour will give you a lighter, fluffier biscuit, but the outer crust won't have as much bite to it. Conversely, all-purpose flour will provide more bite, but it'll be a drier, less airy biscuit. The solution: Use half cake flour and half all-purpose flour.

What temperature do you bake biscuits at? ›

A hot oven helps biscuits bake—and rise—quickly. We recommend 475˚F for 15 minutes.

How long should biscuit dough rest? ›

Cover the dough loosely with a kitchen towel and allow it to rest for 30 minutes. Gently pat out the dough some more, so that the rectangle is roughly 10 inches by 6 inches. Cut dough into biscuits using a floured biscuit cutter (or even a glass, though its duller edge may result in slightly less tall biscuits).

How to get biscuits to rise higher? ›

Keep the oven hot.

When baking buttery treats like biscuits, the key is to bake them at a temperature where the water in the butter turns quickly to steam. This steam is a big part of how the biscuits achieve their height, as it evaporates up and out.

What makes good biscuits? ›

For flaky layers, use cold butter. When you cut in the butter, you have coarse crumbs of butter coated with flour. When the biscuit bakes, the butter will melt, releasing steam and creating pockets of air. This makes the biscuits airy and flaky on the inside.

How thick should you roll biscuit dough? ›

Now place the dough onto a floured surface and roll it out to 3/4 inch thick. (note, if at any point the butter softens and it becomes hard to work with, refrigerate the dough for about 20 minutes or until it firms up a little.) Using a biscuit cutter (3-inches in diameter), cut as many biscuits as you can.

Why are my Bisquick biscuits so dense? ›

The reason: The butter has not been incorporated evenly, leaving pockets of your cooked biscuits that are dry, dense, and filled with flour. But even if you properly mix your biscuits, if your butter pieces are too large or inconsistently sized they may not get distributed evenly throughout the dough.

What is the key characteristics of a good biscuit? ›

In general, a rolled biscuit of desirable quality has a golden brown, smooth and crisp crust without brown specks, and a tender and flaky crumb; it is expected to be symmetrical in shape with a high height, flat top and straight side (Learning and Food Resource of Oregon State University, 2012, see web references).

How do you make my biscuits rise higher? ›

Embrace stacking. In biscuit-making, height and flakiness go hand in hand. Why? Because the layers of butter that get compressed and stacked as you build your biscuits are what create those flakey biscuit bits, and they also create steam in the oven — which helps the biscuits to expand as tall as possible.

What ingredient most caused the biscuits to rise? ›

While biscuits receive some leavening power from chemical sources — baking powder and baking soda — the difference between serviceable and greatness comes from the extra rise that steam provides. In order to generate steam, the oven must be set at a minimum of 425 degrees for at least 10 minutes prior to baking.

What does cream of tartar do in biscuits? ›

Cream of Tartar plays a crucial role in biscuit-making by serving as a leavening agent. When combined with baking soda, it produces carbon dioxide gas, leading to the expansion of the dough during baking.
